Creamy Homemade Mayonnaise

Making your own mayonnaise at home is easy and rewarding.

I strongly recommend using an immersion blender and its mixing cup. It will make a huge difference! While making mayonnaise by hand is possible, it’s a lot of work and time-consuming, requiring a significant amount of whisking. Additionally, using a whisk or food processor to mix mayonnaise often results in a less thick consistency compared to the immersion blender.

Creamy Homemade Mayonnaise

Here is a simple recipe to make a creamy and tasty mayonnaise at home.

Equipment

  • Immersion blender with blending jar

Ingredients
  

  • 1 whole egg, room temperature
  • 1 cup avocado or grapeseed oil
  • 1 tablespoon apple cider or red vinegar
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon honey, optional

Instructions
 

  • Add all the ingredients to the blending jar that came with the immersion blender.
  • Using the highest speed setting of the blender, blend the mixture until smooth and well combined.
  • As the mayonnaise begins to emulsify and thicken, slowly move the stick blender up and down to ensure thorough mixing.
  • Once the oil is fully incorporated and the mixture has thickened, taste the mayonnaise for seasoning. Adjust with more salt if necessary.
  • For a touch of sweetness, consider adding the honey and adjust to your preferred taste.
  • Transfer the homemade mayonnaise to a clean, airtight container. While it can be used immediately, refrigerating it for at least 30 minutes will allow the flavors to meld and develop.
  • Store the mayonnaise in the refrigerator for up to 1 week.
