Do you happen to be one of those who don’t enjoy oatmeal? Well, this baked oatmeal recipe is for those who don’t typically enjoy oatmeal. Trust me, I used to be one of them. I experimented with various cooking methods, but nothing seemed to change my mind. However, the truth is that oatmeal provides numerous benefits for our bodies.
Some of the benefits of incorporating oatmeal into our diet:
- Lower Cholesterol: thanks to its high content of soluble fiber, oats help lower levels of bad cholesterol (LDL), reducing the risk of heart disease.
- Guard Against Diseases: regular consumption of oatmeal can help decrease the chances of developing heart disease and Type 2 diabetes.
- Weight Management: oatmeal keeps us feeling fuller for longer, curbing our appetite and preventing unnecessary snacking.
A few years ago, I stumbled upon a recipe for baked oatmeal. Intrigued, I decided to try it, and to my surprise, I actually enjoyed it! Gradually, I made small adaptations to the recipe until it became perfect to suit my taste. Every other Saturday morning, I whip up a batch of this delicious baked oatmeal. I even make extras and store them in the fridge for several days of breakfast bliss.
The good thing about this recipe lies in its versatility – eat it on its own, pour a bit of milk over it, or indulge alongside a scoop of creamy vanilla ice cream, just as I prefer. My personal recommendation? Eat it while it’s hot or warm, as it truly enhances the flavor.

Baked Oatmeal with Apples and Nuts
Ingredients
- 1 1/2 cup oats, old fashioned rolled oats
- 1/2 cup brown sugar
- 1 teaspoon cinnamon powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup whole milk, room temperature
- 1 medium egg
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 3/4 cup green apple, peeled and chopped
- 1/2 cup pecans, chopped
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Prepare a 9-inch glass mold, round or square.
- In a large bowl mix the dry ingredients: oats, sugar, cinnamon, baking powder and, salt.
- In a separate large bowl whisk together the milk, egg, melted butter, and vanilla.
- Add the liquid mixture to the dry mixture, and stir until combined.
- Stir in the apples and walnuts.
- Bake for 35-40 minutes, or until a toothpick inserted comes out clean, the top should look a bit toasted.
- Transfer to a rack and let it rest for 5 minutes.
Notes
- It is important to use the old-fashioned rolled oats for the best texture and flavor.
- You can add the fruit you want, my favorites are blueberries, strawberries, mango, and banana. You can also combine various fruits if you like
- If you don’t drink regular milk, you can substitute it with soy, almond, or coconut milk.
- If you use salted butter, omit the salt.
- Although brown sugar gives it a great flavor, you can use granulated sugar.
