Thanks to my mom, I discovered this amazing garlic and cilantro butter recipe. From the moment I tasted it, I was hooked on its simplicity and richness. The addition of fresh cilantro not only adds a vibrant touch of green to the butter, but it also introduces a captivating flavor profile. This versatile butter pairs perfectly with an array of dishes. Whether you choose to spread it on warm bread, enjoy it alongside plantains or yucca, or explore other creative combinations, the possibilities are endless. As a proud Puerto Rican and bread lover, (especially when it comes to “pan sobao”), I find nothing more satisfying than enjoying a slice of bread, spread with this butter while eating “sopón de gandules”, which is basically a green pigeon peas stew.

Garlic and Cilantro Butter
Ingredients
- 2 cloves garlic
- 1/4 teaspoon salt
- 3 tablespoons fresh cilantro, chopped
- 1/2 cup unsalted butter, room temperature
Instructions
- Using a mortar, crush the garlic with the salt.
- Add the cilantro and mix until well combined.
- Transfer the mixture to a container and add the butter.
- With a spoon or fork, mix until smooth.
- You can use the butter as soon as you make it otherwise, transfer it into a glass container with a lid and store it in the refrigerator.
Notes
- If you are vegan you can substitute the butter and use the vegan alternative, it is very tasty.
- You can reduce the salt if you wish, but I recommend that you add at least a pinch of salt to the garlic before crushing it so you can handle it better.
- Do you like garlic but don’t love it? add just one clove.
